About this deal

I tried that method with my Detroit-style pizza, but the problem was slicing the brick cheese—it's very soft, which makes slicing an almost impossible endeavor. Compared to the struggles I went through to nail the crust and cheese, the sauce was a piece of cake.

This is where the real magic of Detroit-style pizza lies, and, as I found out, getting it is not exactly straightforward. Gently stretch the dough into the edges and corners of the pan until it starts to shrink back and won’t stretch any farther.Cover the dough with a clean kitchen towel or plastic wrap and allow to rise in draft-free place in your kitchen/house and set a timer for 15 minutes.

Your second option is to place the pizza directly on the floor of a preheated oven, which will also give it a nice, quick energy boost. Add your toppings of choice next and spread the grated low-moisture mozzarella all over the pizza ensuring it touches the edges of the pizza so we get the crispy edges when it bakes. Cover with plastic wrap and let rest for 15 minutes which will allow the dough to relax before kneading. There's a school of thought that suggests waiting to add sauce to a Detroit pizza until after it comes out of the oven.Trade journal Pizza Today wrote in 2018 that "Perhaps no pizza style has entered the public consciousness in quite the way that Detroit-style pan pizza has. Once the dough was kneaded, I let it rise for a couple hours at room temperature before turning it into a greased pan (more on that pan later). If you are using pickled jalapeños, scatter them evenly over the pizza, keeping in mind heat tolerance — they make the pizza very spicy.

GQ food critic Alan Richman included Buddy's Pizza and Luigi's the Original among his 2009 list of 25 best pizzas in the USA. Detroit-style pizza was developed in 1946 at Buddy's Rendezvous, a former speakeasy owned by Gus and Anna Guerra located at the corner of Six Mile Road and Conant Street in Detroit.

Still, if you don't want a dedicated pizza pan, I found that you can get decent results from a pair of deep, well-seasoned or nonstick 8- by 8-inch cake pans. Add the tomatoes and sugar, bring to a simmer, and cook until the juices have reduced significantly and you have about 3 cups of sauce, about 20 minutes. At those temperatures, you get good browning and crisping of the crust before the dough has a chance to dry out too much.

You don't need to be a master pizzaiolo or worry about shimmying dough onto a stone, instead, all you need is a pan. Adam is right that high hydration is a great way to go (though I ended up scaling my water back to around 73% instead of 75%), but I wasn't fully convinced about the all-purpose flour. These cheeses do not taste nearly as good as block cheese you grate yourself, and one solution, smartly suggested by Christy Alia is to use pre-shredded cheese along the perimeter and the good stuff in the interior. If you do have a Baking Steel or pizza stone, place it on a rack in the middle or lower third of the oven while it preheats.

After these two sets of stretches and folds, you should see a difference in the texture of the dough: it will be smoother, stronger, and more elastic. Form the dough into a ball, place it into a lightly-greased bowl, cover, and allow to rest until doubled, about 2 hours. it was stretched perfectly to all the edges but when I did the 8 min par bake it shrunk down significantly. It's crispy, fatty, cheesy, tangy, and glorious, especially those coveted corner pieces that give you that extra crunch.
